How Water Cooling Works?
Water cooling tunnels—also known as hydrocoolers—use chilled water through showers, cascades, or spray systems to remove heat from products. The water absorbs heat directly from the product surface, achieving rapid and uniform temperature reduction.
Water has a volumetric heat capacity up to 3,500 times greater than air, which means it can extract heat far more efficiently. This makes water cooling the fastest method for reducing product temperature.

Advantages of Water Cooling
Superior cooling speed. Water cooling strips field heat faster than any other method. A 2023 study on carrot weight loss showed that hydro-cooled carrots stored at low temperatures lost just 8.1% of their weight after nine days, compared to over 20% for non-cooled carrots.
Excellent for high-volume operations. Water cooling systems are well-suited for continuous, high-throughput production lines where speed is critical.
Stable cooling temperature. Cold water maintains a more consistent temperature than air, resulting in better cooling effect and product quality, particularly for chocolate and confectionery.
Compact design. Water cooling systems generally require less space than air-cooled alternatives.
