To implement proper staged cooling in your tunnel:
1. Zone your tunnel — Minimum 3 independently controlled zones
2. Set Zone 1 at 15–18°C — Gentle initial cooling, 1–2 minutes
3. Set Zone 2 at 8–12°C — Main crystallization, 5–8 minutes
4. Set Zone 3 at 14–18°C — Exit rewarming, 2–4 minutes
5. Control dew point — Exit temperature > ambient dew point by at least 3°C
6. Monitor zone temperatures — ±0.5°C precision required
7. Adjust for chocolate type — Milk chocolate requires approximately 50% longer cooling time than dark chocolate
