Why Staged Cooling Matters in Cooling Tunnel?

Pull heat too fast at entry and the surface sets before the core, locking in stress that shows as cracks; too slow and unstable crystals form and the temper is lost. The curve—not just the minimum temperature—is what sets quality. Even a 1–2°C variation across zones can significantly affect crystallization uniformity.

A good cooling tunnel cools in stages, not in one cold blast. A typical cooling curve runs:

Zone 1 (Entry): 60–65°F (15–18°C)Gentle initial cooling; allows heat from the core to escape

Zone 2 (Middle): 45–50°F (7–10°C)Main cooling; further cools and completely solidifies the product

Zone 3 (Exit): 60–65°F (15–18°C)Gradual rewarming; brings product above dew point of packaging room

The precise setting of the cooling curve ensures the perfect crystallization of the chocolate, as well as a glossy finish.
