A good cooling tunnel cools in stages, not in one cold blast. A typical cooling curve runs:
Zone 1 (Entry): 60–65°F (15–18°C), Gentle initial cooling; allows heat from the core to escape
Zone 2 (Middle): 45–50°F (7–10°C), Main cooling; further cools and completely solidifies the product
Zone 3 (Exit): 60–65°F (15–18°C), Gradual rewarming; brings product above dew point of packaging room
